Baby Blintze Stacks

Peach Filling (below)

1 1/2 cups all-purpose flour*

1 tablespoon granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground nutmeg 

2 cups milk 

2 egg

2 tablespoon butter or margarine,melted

1/2 teaspoon vanilla

1/2 cut dairy sour cream 

2 teablespoon packed brown sugar 


Peach filling 

1 carton (24 ounces) creamed cottage cheese

2 medium peaches,peeled and chopped

3 tablespoon sugar

1/2 teaspoon ground nutmeg

1/4 teaspoon salt 

1/4 teaspoon almond extract

Mix all ingredients thoroughly

Peach slices 

Prepare Peach Filling;refrigerate.Mix flour,granulated 

sugar,baking,powder,salt and nutmeg in large bowl.Beat

in milk,eggs,butter and vanilla.

Lightly butter griddle;heat until bubbly.Pour batter 

onto griddle as pictured;bake only on 1 side until bottoms 

 are brown.Place blintzes on towel;cover.

For each serving,stack 5 blintzes,spereading 1 tablespoon

Peach Falling between aech blintze.Mix sour cream and brown sugar;

spoon onto blintzestacks.Garnish with peach silices.


Pour batter by tablespoon fuls onto hot griddle.Bake only 1 side until bottoms are brown.


For each serving,stack 5 blintzes.Spread the Peach Filling between each blintze.
